A CHAT WITH REN ABOUT SPIRITS, LIFE AND THE INDUSTRY

WHAT IS IT ABOUT MATTHEW’S FIX THAT YOU LOVE?

Ren: I love how Matthew’s Fix brings together spice and refreshing flavors at the same time. You’ll get the hint of spice while maintaining refreshing qualities. This is San Diego’s version of a winter cocktail.

WHICH IS YOUR FAVORITE BAR BESIDES THE ONES YOU WORK AT?

Ren: My favorite by far is Cantina Mayahuel. It’s a family. I absolutely love of agave, so it makes me feel like a kid in a candy shop. Also, I love The Turf Club. There is always a great energy around the bar. Zero pretentiousness. No fucks given. My adult playground!
WHAT IS YOUR FAVORITE THING TO DO IN SAN DIEGO?
Ren: As I’m originally from Boston, I love how I can go to the beach year around. My favorite is to go to Coronado dog beach with my greyhound Rufio.

OTHER THAN HENEBERY, WHAT IS YOUR SPIRIT OF CHOICE?

Ren: It truly depends on the day. While I love all spirit, more often than not I’m reaching for scotch or a mezcal. But then there’s nothing like a good daiquiri.

WHAT IS YOUR FAVORITE LOCAL BEER?

Ren: Local sour beers. Ballast Point Sour Wench.

WHAT WAS THE FIRST SPIRIT YOU EVER DRANK?

Ren: Whiskey.

WHAT ADVICE WOULD YOU GIVE THOSE WHO ARE NEW TO THE INDUSTRY?

Ren: Patience and don’t forget the little things. The biggest mistakes people new to this industry make is trying to dive into the big leagues foregoing all the essentials of prep, and cleaning. All of the best bartenders were once barbacks. I trained at Drink in Boston.

WHAT IS THE PERFECT DAY OFF FOR YOU?

Ren: A very lengthy and boozy brunch with mimosas. Beach and bar hopping on patios with friends.

WHAT WOULD YOU RECOMMEND FOR THE FIRST TIMER AT SYCAMORE DEN?

Ren: Definitely check out the cocktail menu, because we work hard on all the drinks. The cocktail menu is a display for all of our hard work and we want to show them off. After the first cocktail we can build from there. Daily, customers come in and order a call with a mixer. We want these people to get out of their comfort zone.
